we can decouple the ephemeral events from the encryption. Does MLS allow for sending arbitrary event kinds like gift wraps do? iirc it wasn't the case but I might be wrong.

Yes, MLS is a key derivation system, what you encrypt is out of scope, so it works with any NIP, and even blossom blobs.
