I put slices of radish to dry out using sugar; rarely I use salt.

How do you do it?

The radishes are cut into strips and dried in the sun. In the area where I live, winters are very dry and sunny, so it is possible to dry the radishes without using salt or sugar.

Oh!

I have never tried those.

I just do it with sugar or salt to dry some of the water and soothe the acidic and bitter taste.

I season it right away for consumption.

I often use your cooking method when making vinegared dishes 😉

The things I dry in the sun become preserved foods. When I use them, I rehydrate in water and cook them 🫕

Dried strips of daikon radish are a traditional Japanese preserved food (though few people make them at home) 🇯🇵🍚
