What happens if you don’t add any sulfites at all?
there will still be sulfites as they occur naturally. it's just a bit more risk from a business perspective and since sulfites are going to exist no matter what, adding a tiny bit to ensure consistent quality is a no brainer considering the extremely minimal downside for health
