A good sound engineer should take 2-channel into account. Without a center channel, it should get mixed evenly left/right.

That being said, I've found the sound mastering on a lot of recent movies complete dog shit. Last year I bought a pretty high end KEF center speaker to replace my Klipsch to help with dialog on some poorly mixed movies.
