It is actually whipped/creamed or spun into the state of fine crystallization that results. There is a process that most beekeepers in warmer climates don’t bother to do because the top layer will re-liquify in our climate, which makes it look messed up, (even though it’s just fine), so it’s harder to sell to the common consumer.
