The eNuts experience however cool makes me want to just have a button that says “make private” on a lightning invoice and that automatically handles all of the minting / exchanging as a backend process invisible to the user.

eCash would be a privacy upgrade for custodial LN wallets. I once brought up the idea to add a "Make private" button on LNbits - which would covert all balances all accounts that are hosted on the instead to eCash.
The custodian would no longer see what each custodee has and whom he's paying (ideally).
Not sure it's doable, but be worth an investigation.
