If one npub, verifiably representing a person or legal entity, holding a copyright, writes "Yes, you can publish my work on Nostr," into a note, and signs it, you can save that note to your hard disk and bring it out, anytime someone claims you broke copyright.

Most people probably haven't thought of this because they think of notes as being something that lives on relays, but notes are atomic and merely transported over or stored on relays. You can just copy-paste the json into a .txt file and save it on your computer. That's a signed document.
