If there were enough people using it spread out less than 300m from each other, over a huge distance, like the top to the bottom of a country. Would all those people be able to message each other all the way along that chain/web? Or will a user only ever see messages from people within 300m from themselves?

Optimized bluetooth devices and a clear signal path can cover up to 150m (492 inch). That's why Jack's team mention 300m (984 inch) links. If the peers or users relay the messages, they can cover larger distances, shaping a meshnet.

So, in theory, with enough peers you could cover a whole landmass like America?

Good for in-city stuff. For larger area Lora is probably more effective. This could be very handy in emergency situations though, especially urban ones. As long as everyone downloads it beforehand, and has an iPhone.

I actually used to work at a wireless ISP, maintaining 50km plus wifi & licensed frequency links. For any kind of distance Bluetooth isn't a great solution. In a more occupied are with a mesh yes, it's more useful.
