I don't even know how to switch to B&W 🤔 I've got 2 camera apps on a Pixel 7a and can't find it.

You can either do it in post processing or install a separate camera app (e.g. BlackCam, Hypocam)

Enabling RAW export in your Pixel is advisable for post processing btw, but even Google photos can give decent results
