What happens in the case of a world war where cables are destroyed such that there’s a Bitcoin split brain/partitioning between east and west (for example).

Do the two split networks continue to operate independently with forked chains? And then what about when the cable reconnects?

I don’t know enough about Bitcoin yet to know the answers.

The 2 networks continue to work. After reconnecting the chain with more proof of work (blocks) becomes the default network.

Dont believe there could be a split as such.

Tech such as mesh is useable in these situations.

Does that mean that transactions recorded in the loser chain are no longer valid?

Correct. This allows for possible double spends.
