For example this one..? There are some recipe by google search.. Some Japanese had tried to make it in abroad. But I have never made it...😅 I've heard of yoghurt makers that can do it.
Yes, I found that site earlier but looks like all 3 recipes require either the dry bacillus powder or some already made natto as a starter. There is no way for me to find natto in any store where I live.
I did find a chinese youtuber from Shandong who just made some without any starter culture but I worry a bit about what happens if the wrong bacillus takes over.🥴

I wouldn't recommend fermenting food yourself.
Instead, you can preserve natto by freezing them.
Defrosted natto are still as good as fresh natto. I always bought frozen natto when I was outside Japan and never unsatisfied me.
So, if you like natto, I would suggest:
- Buy plenty amount of natto when you have chance, e.g when you come to Japanese grocery store far from home
- Preserve them in freezer
- Find a best timing to defrost natto using your microwave when you eat!
That way you will not fail eating good plate with natto!

I live in a country, a small island, where there is really no chance to find a Japanese grocery store. I already ferment different kinds of vegetables/fruits/milk but I agree with you about fermented beans, it's a possibility to have a potentially really bad bacteria grow.
Maybe I should visit the Japanese Embassy if they have one here and ask them for a suggestion.🤣
