it isn't unchangeable, my bad on that word...

I mean resistant to change ... just looking for good easy to understand materials to make the case that distribution of the software to nodes is a good way to protect it from attacks

Anyone can change it. The problem is to convince almost everyone to run that version of the code in their nodes.

Not that I know of. But it's as simple as that, changes to BTC Core repository must go through code reviews and only Core devs can commit the changes, and people that run the nodes must update to that version. People can also create a different implementation of Core but the same applies, people must choose to run it.
