Man, these just came out of the oven and smell to die forโ€ฆ

Figure yโ€™all might like the recipe for this go-to food I make for my baby. We just cut them in half and hand her a half at a time, and they donโ€™t make a huge mess, but are really healthy for her, a great way to expose her to different flavors, and she loves them. They would be good for adults, too, and the more I make them the more tempted I am to eat one.

8 extra large eggs

2.5 c mix-ins (vegetables, meats, etc. Today itโ€™s green pork sausage and mushrooms)

1/2 c shredded cheese

Season to taste with whatever herbs and spices you like

Butter or bacon/sausage grease to grease cups of muffin pan

Preheat oven to 350 F. Grease cups of muffin pan well.

Pre-cook your mix-ins until just cooked and moisture is reduced. Let them cool.

Mix eggs, cooled mix-ins, cheese, and seasonings in a large bowl. Scoop 1/4 c into each cup of a muffin pan. Bake 23-28 minutes (Iโ€™ve always had them turn out perfectly right at 23).

They freeze great, too!

Neat! So theyโ€™re like mini muffin meat loaf

Except the emphasis is on eggs and thereโ€™s no breadcrumbs or anything. Plus this is my first time making them with meats.
