I'm a bit envious. I love to cook. I follow recipes... not lol. I get an idea of what they are doing and I wing it.

Yeah, at a home kitchen, (with the exception of baking) fuck recipes. All my recipes at home are basically ingredient lists and not much more.

In a commercial kitchen, consistency is key so you need recipes to be strictly followed. I've only been working in the chocolate kitchen for a few months and am still in awe every shift I do. I wish chef would let us take more pics to post - but he is super strict about that. Incredible stuff, though!

but of course! Consistency also applies to the profit for the kitchen, can't be using too much cheese on a pizza. Learned that the hard way.

😂First kitchen I ever worked at (decades ago) chef caught me loading up the cheese for a friend of mine. He was NOT impressed and told me so! I learned a valuable lesson that day. Fuck around & find out.🤣
