What is this? I've never heard of blueberry vinegar before.
I looked up a recipe and it sounds like just adding blueberry flavor to existing vinegar.

But you're talking about fermenting blueberries, which sounds way more advanced, and more desirable. Where can I find out more about this?

You are right about that recipe, don't bother with it. Simply ferment the blueberries in water and sugar. We used about a 12% Sugar/Blueberry ratio, put everything in a jar and covered with water. Stir daily and soon it becomes a blueberry fermented soda (maybe a kvass or schrub) and the longer you let it ferment the more dry it becomes. So let it ferment until you get the desired vinegar taste. This can take weeks or months depending on how sweet or dry you want it.

Apparently I lost track of this post and found a recipe that says to add 2% salt to prevent bad bacterias/mold from growing.
It did prevent molding, but oh my it is so salty! I guess that's fine if I'm flavoring potato chips, but it has limited use, that's for sure!
Also, what is the difference in recipies for turning blueberries into alcohol versus vinegar? Is it just more sugar? Less air?
If it's the sugar that turns to alcohol, could you just skip the fruit and let sugar water ferment? I really don't understand this process...

By accident we made 80 gallons of blueberry cider vinegar, it was supposed to be hard cider. Just passed through WV a few weeks ago and stayed overnight at a farm. Got some really good farm products there.
