Ok Ewelina, here's my herring salad recipe:

Herring Salad (8 persons as a main dish)

A recipe that is over 100 years old

Ingrediënts:

Ca 2.5 kg potatoes

2 jars beetroots

1 jar pickles

1 jar sweet-sauer silver onions

1 jar Amsterdam onions (or just another jar sweet-sauer onions)

1 jar capers

2 jars herrings

2 onions

3 sauer apples

Mayonnaise

Dryed dill

Sugar

Salt and pepper

Practise:

Peel the potatoes and slice them in blocks. Cook them in water and some salt (cook them longer than al dente).

When cooked, pour the potatoes and put it in a bowl so they will cool off faster.

Wait untill the potatoes are cooled off.

Slice the pickles, silver onions, Amsterdam onions, raw onions, 40 grams of capers and beetroots in small pieces and put that together in a big pan or bowl. Don't trown the pickle juice away, you'll need that later.

Now slice the apples the same way and add that to it. Stir everything trough.

Start adding the potatoes and keep stirring untill it's all in there.

Slice the herrings and add that to the rest. If there are in the jar of herrings, some onions or pickles, slice and add them too.

Stir once more, you'll get muscles from it!

Take some juice from the jar of pickles and put that in a small bowl. Add as much mayonnaise untill it looks a bit like dressing. Now start adding sugar (it will take some minutes until it's resolved).

Taste it, and add as much sugar untill it's a bit sweet. Now add some pepper and dryed dille.

Add this dressing to the herring salad and stirr it really good trough.

Put the salad in clean bowls, cover that with plastic foil and leave it in the fridge untill the next day.

Tip: eat the herring salad with some bread.

Or it can be used too as a side dish with a bbq.

It has at least 4 days of shelf life in the fridge.
