how do people with lots of bitcoin even store theirs?

Multisig
Multisig and spread out across several cold storage wallets I would imagine.
I don’t have lots but cold storage using multisig is the way to go

Multisig with no hardware besides steel in geographically diverse locations. Gun-to-my-head scenario requires a road trip.
In all seriousness redundancy builds security. That can mean single sig with multiple hardware devices pointing to the same address, or multiple seed phrases stored in any number of ways.
Multi-sig is also good, but unless you have someone you trust to hold the other keys, thats basically the same as the first in my opinion.
You could also just use multiple single sig addresses with a hardware device for each one so not all your eggs in one basket.
