I’m pretty deep in the Apple ecosystem but also thinking about changing. Would be great if you could give an update on drawbacks in some weeks or months. I’d have to change everything starting with the phone, mac, watch, pods etc.

I've moved from Linux as my daily driver to macOS probably 10 years ago, iPhone since 2006, airpods, iPad, etc etc
For me the most important device that I’m worrying about not being as good is the watch. Also I would want to use grapheneOS and I’m not sure if that works in harmony with a smart watch. I’ll have to do some research
i'm using a fossil e-ink hybrid watch with gadget bridge and it has the functions that i want (step tracking, heart rate monitor, workout tracking, notifcations, music control etc..).
Gadget bridge supports a variety of watches but i chose an e-ink watch for the battery life. Fuuuck charging a watch all the time. Lol.
Ive never used an apple watch so not sure what the experiences like or how it compares. But my setup does what i want without sending my data to a 3rd party and thats really all I cared about.
Okay, cool! Well, Apple doesn’t send my data anywhere without my consent either. That’s one reason why I like Apple. Especially health data is handled carefully. And the experience is probably unmatched by any other smart watch. The e-ink sounds cool though. I’ll check it out
I guess end of the day i was never super stoked on "smart watches" to start with ( and i don't trust google not to send off my health data even if they claim differently) but i like the step tracking and having notifcations on my wrist. The hybrid is a nice compromise.

Been there, done that. At the begin of 2022, I sold /everything/. iPhone XR, Apple Watch 6, MacBook Pro. All gone. Since then I have lived with Android and Windows mainly. Why not linux? It's accessibility for visually impaired is, frankly, dogshit - and I only see on one eye and that barely so...
Anyway; transfering from iCloud to the other devices was a bit of work, but also not impossible. You can download your stuff from iCloud via their WebUI or by installing the Windows tools - this gives you the opportunity to have it download just about everything to your drive, originals included, which you can then migrate to something else. In my case, I migrated to Photoprism. Not a great replacement, but good enough.
As much as I have grown a disdain for Apple, their system *does* work... mostly. And it's so frustrating that the only closely similar alternatives are from Google. Argh. Chosing between two illnesses...
That said, it IS possible, I DID the transistion and now I have a working setup. But... Expect to invest time, if you ever do. 2-3 days, roughly.
The NSA has Intel Management Engine and AMD PSPP to gather everything they need, including the radio firmware on every phone I'm sure and basically anything they else need. I guess that's their revenge for us taking a shit on their clipper chip in the 90's.
Reportedly GrapheneOS does come with "carrier mitigations" to keep Google and your carrier out of your phone, but I can't imagine it'll ever be enough for us to claim digital privacy.

probably a lot less since the iPhone is so much more vertically integrated, so restricted and the maker has a business model besides data harvesting
not with grapheneOS that has a strong focus on privacy and security, iphone can't match that. also just because apple main business model isn't ads does not mean it doesn't profit from user information and does not share user information with third parties, like it was caught doing.
Why GrapheneOS? How about LineageOS? I just want to take this step too, but I can't decide which OS to choose...
