Get a large stock pot. Cut bacon into thin strips and cook down. Leave grease in pot. Chop one large onion and six cloves of garlic and saute.

Next add homemade chicken stock and water while leaving everything in the pot. Add 2 to 3 lb of collard greens and simmer for 2 hours. You can also take and use a smoked turkey leg, ham hock, or just take some ham and rough chop or cubit brown it real quick in a skillet throw it in the pot and simmer a little longer.
Check your greens often soft is okay but a little bit of crunch is good.
The main thing you need is datil pepper vinegar to add to the pot. Save some in add a little bit to your greens after they're cooked.
