Why is that? Does it have to do with the way apps interact with each other on Android vs iOS?

Yes, iOS doesn't have an API to query other app data in background like on android so it would always open the signer and lead to a bad experience

I think the same as amber you receive a notification for the permissions you didn't setup the remember me option and when you check the remember me option it will work in the background
