Someone told me that SNAP packages on Ubuntu are bad. What’s wrong with them? Is this true? I downloaded some apps there already but uninstalled them after.

Some people complain that snap updates to apps aren't great. I haven't had much issue (Linux Mint w/KDE here)
Why do they complain about the updates?
I dislike them because I want 1 central package manager to track and manage all of my software update needs. If I wanted to have to update each application 1 by 1 I could run Windows.
I still have some on my machine. I just hate them for being too lazy to get added to apt. Always on the lookout for an alternative I can manage through apt.
A big reason is the use of a proprietary backend for the Snap Store.
Ubuntu is hiding stuff. And FOSS people dont like it.
The rest of the linux world has embraced flatpaks instead.
But ubuntu wants to do their own thing.
Competition is good though.
Imo, if you are concerned with privacy and freedom, use a distribution that uses flatpaks. Like Arch, fedora, or Linux mint.
If you just want your computer to work, Ubuntu and Snaps are fine.
