Why would they plead guilty tho? For them to be guilty they had to have intent. How on Earth would they know, if Samourai Wallet is non-custodial?

They pled guilty, in my opinion, because this shit is never going to end and they will eventually run out of money. Idk what the term is called but I've seen this happen with gun cases. The state can have a lawsuit go on indefinitely. In the meantime, you sit in prison or on house arrest. You have no income or livelihood.
Then again, this case took place in the same state where a judge literally said that the Second Amendment doesn't exist in her courtroom.

The SDNY literally said that sw is not a money transmitter. If my memory is correct, I believe the judge forbid the lawyers from using that statement in their defense. How can an impartial judge impose a rule like that?
