Yeah, that's on my to-do someday list. Along with water fast that you advocate for.
Start slow and build it up. For example, cut back a meal that you don’t care for like breakfast or dinner ( for me it’s dinner) that way your eating window is 8hrs and fasting 16hrs
Once you have that mastered, once a week you go ahead and skip one meal (that way you get 24hrs+ no food)
This way you’ll be in a calorie deficit while eating everything you enjoy
