Depends on the usecase and userbase imo
Btcpayserver via self hosted VPS w/ Luna Node. Dm if you want more details. Super simple and as close to running your own server as possible.

I’ve only used BTCPayServer and it worked fine for me. There are WooCommerce plugins available.
Btcpayserver if you wanna run a node and do liquidity management, most sovereign
Nodeless if you don't wanna do node stuff.
Zaprite if you are doing b2b invoicing

btcpayserver is always getting better.
zaprite does payments now too and is rolling out lots of new features. (there’s a flat fee to use it.)
BTCpay server is excellent and vesitile. Perhaps it is overkill if you have a narrow use case.
I am currently using BTCpay to receive zaps in a fully self-sovereign non-custodial way.
