It's not what I think it's responsible it's more who. The person putting it in their mouth! Yes the food system is utterly trash but it boils down to education like with most things.
Food companies do create hyper palatable foods where it's easy to over indulge. But saying it's one food item is intellectually lazy. I could say it literally about any ingredient.
I’m not saying it’s entirely seed oils but I have a sneaking suspicion seed oils are 50% + to blame.
They could well be, that and the fact they're in almost every processed food. The point is to be able to monitor it and have easy ways to still not take over your life by not allowing yourself the odd bad meal here and there.
As long as your bloods are hitting decent levels with either an annual or 9 monthly check then you're all good.

Not saying a little seed oils will ruin your life, but cutting out seed oils basically means cutting out all processed food. Which is a huge net positive for the average person.
Jack Kruse would say over exposure to blue light from devices and not enough natural light exposure. A screwed up circadian rhythm has all sort of downstream effects that lead to weight gain among other things.
Seed oils started to find their way into the food in the 50’s-70’s more or less, but that’s also when TVs became popular and Vegas (neon bulbs) became a thing.
Both an issue. If you eat too much seed oils then you can’t be in the sun as long cause you will burn
Solution: eat steaks outside
