The hills close to Quepos (on the way to Manuel Antonio park) - amazing views, great restaurants, reasonable drive to Uvita or Dominical
Overall I'd say mix it up, don't stay in one place. Spend 5 days in Arenal, then something in Guanacaste and then something around Uvita (like the Quepos I mentioned), maybe also something in the hills around San Jose.
Definitely spend at least two days in the mountains near Arenal. Natural springs, etc. For the beach, we loved Tamarindo better than Jaco. We only explored those areas though. So many great places.

Recommend checking out around Arenal for hiking and jungle, Santa Teresa for surfing and beach vibes, Cahuita for an an epic nature reserve full of wildlife lined by long beaches, Uvita for jungle and beaches - we went to an incredible festival there called Envision
Hiked to the bottom of a waterfall near Arenal. One of the most beautiful places on earth.

Jaco is beautiful that time of year. Little bit of a drive from San Jose (2 hrs). The best food and restaurants I have ever had during that trip
Hi Nat. For extended holidays, yes Uvita (Pacific South), you can use lightning in several places there. Beach🏖️🏄♀👙 is great there.
Be warned the raining season is about to start, and it can get rough in that area at times. You will need transportation (Uber/taxis are rare there sometimes).
If you rather prefer mountains and forests areas, consider San Carlos (Arenal Volcano 🌋 area).
