Depends on the source. Both are unfortunately massively adulterated in modern markets.

For me, I’d say Honey: I can do my own bees but don’t tap my own trees so I have to verify that supply chain

What do you cook with maple?

Sub it for sugar in baked goods, root vegetables with rosemary, time and sage, grass fed butter or ghee are the first two ideas that come to mind

Also, according to an ayurvedic doctor I worked with for a while, honey becomes toxic when heated past a certain temperature (can't recall exactly what that # is)
