I love that I can ask my coworker what wine would pair with x dish and he always knows what to pick.

Supposedly these two wines pair really well with the flavors of the type of ramen that I'm making for Thanksgiving. I'm very excited to try these.

Mostly just by considering the flavor profile of the ramen that you're making. So for instance I'm making a shio tonkatsu ramen which is a salty pork ramen.

So thinking from a wine pairing perspective you want a wine that's not too bold but also compliments more fatty flavors.
