would u get a phone with more ram and storage for 30e more than phone with 8gb ram and 256gb storage but u could pick any color u want? i think 12gb ram and 512gb storage is bit overkill, though 4k videos will eat up storage space real fast.

For the disk space, depends what kind of cloud storage solution you have in place. I have 256gb but have 2TB in cloud space so I don't worry about 4k videos.
For RAM always get as mucha as you can. I updgrade phones very rarely and you need to think about future proofing your device.
unless you are a psychopath and are gonna raw dog your phone with no case the better specs are likely worth it.

get the more expensive one, and put a case on your phone like a normal person, you can get any color case you want. the phone color doesnt matter at that point.
the sale ended already, cant find the more expensive model anymore with more storage. I saw ppl in the telegram complaining of the slower 2.2 UFS storage and the small battery in the motorola phone. But honestly i rather have some compromises and smaller phone than massive slab.
12gb ram is good for certain uses, e.g. if you want to virtualize Windows games like fallout 4
who does that? i only install foss games and not emulators. Emulators and such suck on touch screen.
You're right though if you only play foss games you don't really need a PC or an overpowered phone
