Did you use a starter culture?
I made some kimchi for the first time too! Did you taste some as soon as you made it? I couldn't resist trying it right away. It's actually pretty tasty when fresh. Now it's in the back of the fridge waiting for the right meal to come along.
I did not. Going to wait a few days to try it.
