Beet day. 12lb on a 4x4 bed. Not stellar, but not bad. I just have to vacuum seal these tomorrow and they are done. Got a nice feed of baby beets for tonight. And of course the inevitable health scare in the middle of the night tonight when it looks like I’m pissing blood, and forgot I ate a quarter pound of beets lol.

Is the work worth it while the grocery stores are still open? No. Will it be worth it when I can pull them out of the freezer in the middle of winter or in a pinch? Yes.

Carrots, squash, and then pressure canning a hundred pounds of potatoes still to go. Cellaring the other 200lb or so. And trying to get some hunting days in. And a bunch of 50 hour work weeks. Fall is a busy time.

I love beets, especially pickled!

I strained and saved the water when I boiled them, so I could do a few quarts of those. But I thought I’d have more, so I don’t know if I will bother. They are great though. It’s easy all you do is add a couple of cinnamon sticks, vinegar and pickling spice to a couple quarts of the beet water, boil and strain the mixture, and pour it into your quart jars before you process them through the pressure canner for 30 mins.
