The mint will redeem your ecash for lightning and send the payment. The big difference is that the payment comes from the mint. They don't really know who you are or who is ultimately on the other end.
They could also be sending to another mint to make THAT mint's ecash tokens. You could pay a LN invoice from nostr:nprofile1qqst4qyeqenw7zm0fwjsty68h6cnys5jre2xd8ngqpjv5a2j26s78fspzpmhxue69uhkummnw3ezumt0d5hsrwx0h6 and they can mint their ecash tokens with it. I can receive these Coinos tokens and store them in my Minibits wallet, also, marked as coming from the Coinos mint. Like cash from other countries, but all denominated in BTC. It's redeemable for BTC at the country/bank that printed it. I DMed you some ecash from the Coinos mint.
