In some ways, they don't. The bits are just marked as available for being written.

Right. That's my understanding. I might be wrong but deleting a lot of files from a HD could cause decay over time, no?

Usage of a HD over time causes failure. In that regard, deleting files does the least amount of wear compared to copying or moving files.
