Am I understanding it correctly that you can kind of mimic Outbox with Amethyst's relay settings? As in choosing to write & read from different sources?

You can configure your relays in that manner, but Amethyst isn't going to connect to relays and fetch notes from people that you follow unless their relay is already configured in your settings.
Ok, so it lays the basic framework but lacks the automated part of the read side. I think I've got it 😅
