You need the add on of you want it to sign for logins and manage your nsec but that doesn't work on mobile yet.
1 tap zaps are a different thing and don't require the add on.
If you are logged into alby on your default browser on your phone, long press the zap button on a note then press the alby logo down by #nostr wallet connect. It will open the browser and alby will ask you to approve, then it goes back to the app and the NWC section is filled out. Save and you have 1 tap zaps.

I didn't realize that the only way to self-custody in lightning was to run an entire node. Stop me if I'm wrong, but it sure looks like Alby has my coins and I can only move them to another lightning address, not withdraw them to the chain.

Alby is custodial
For onchain withdrawals from an Alby Account your can use services like boltz.exchange today and soon directly via the Alby Browser Extension.
Alby does hold those sats, so zapping amounts only.
Phoenix and breez both do non custodial lightning where the node is on your phone. That means it can't do ln addresses so no receiving zaps. (the node only runs when the app is open so it can only receive when the app is open)
