Why do my addresses not start with bc1? In my jade wallet is this normal?

There are Legacy and Native Segwit "accounts"

Native Segwit are the bc1addresses.

This has confused me before when setting it up

What’s the difference between legacy and native??

Native Segwit saves on fees slightly for on chain transactions, I've never actually used Legacy aside from maybe really early on with some hot wallets.

Something to do with, batching, enabling L2 like lighting and reducing transaction size to save on fees... But. I'm really not technical enough to fully answer that.

Native Segwit (bc1) is what I generally use for my on chain withdrawals.

Can I switch it back to native?

I don’t have jade but it sounds like you created another address that isn’t segwit if yours starts with a 3 tho you should be fine
