3 hours into my first time smoking meat. using a pitmaster IQ to control the heat on a weber. cooking with charcoal + hickory chunks. seems legit so far.

Do you have a probe into the ribs?
I have a probe next to the ribs to regulate the heat. I will probe the ribs for temp using a handheld thermometer in the next hour or so.
