Nice! So if I remove a hashtag here, it’ll just remove the “#” in front of the word in the file. Is that right?

No the file will be untouched. If you remove the tag the Nostr note won’t have that tag in its metadata that clients use to categorise content. All ‘under the hood’ I guess
