Khao Kluk Kapi (ข้าวคลุกกะปิ) – ‘Kapi’ means shrimp paste. It’s fried rice with shrimp paste sauce, topped with a colorful mix of tasty ingredients.

I personally think this dish is a showcase of just how rich Thai cuisine can be. It uses a variety of ingredients, each prepared in a specific way, taking flavors from both land and sea.

I used beef instead of the usual pork belly because we prefer leaner meat. The best way to eat it is to take a little of each topping in every bite to enjoy all the flavors and textures together.
