How are there no Epstein or UFO leakers in the government willing to go to jail or worse for the truth?

There have been. No one cares. Everyone is too busy trying to pay rent. Everyone that speaks out on this. The media tries to cancel them and paint them as crazy. This is the problem.
There are many who try to expose things, and of course if they did they would just seem crazy because the reality is so far from the concensus that no amount of exposure actually exposes it.
And yes of course there are assets who have abilities that are not fully believable by the concensus. They become just internal whispers egging on the self destruction of those who would expose anything.
In the case of UFOs, even if there's something there (I tend to think that there is), it's difficult to come forward with the evidence. Images / video can be faked (especially now). Documents can be faked. And it's even easier to dismiss if it's anonymous.
Physical evidence, if it exists, is kept tightly locked up. The only thing that could move the needle is actual scientific knowledge, i.e. things that can be independently replicated / verified in the real world.
Yeah, the proof your everyday person expects is at a high bar
