Exactly... We fake it at first, do our pattern recognition and figure out what we can actually do! Constant discovery.
Here are some photos and a video from a few years back developing our bbq seasoning recipe and figuring out price points. My jar sizes are typically as large or larger than the ones on the shelf and prices within $1-2 of the higher end ones out there. Next stop is bulking up, Lord willing!
