KYC means know your customer/client. It's the process of identifying and verifying the client's identity.

Think of larger exchanges that ask you for ID, proof of residence and all the additional information when signing up.

Buying non-KYC is buying BTC without the above.

Use email providers like Protonmail, and make use of their additional accounts and alias features.
