8 steaks in the bath.

Other SV has 6 NY Strips. Started from frozen and 136°f (medium) for 8h.

Why do I have TWO SV's?

Time! I get 3-4 days off and the months worth of meats I'm prepping wouldn't get done by the time I gotta return to work.

I still have 8 flat irons to do and a couple of sirloin and flank steaks.

Wow. 4h at 137° came out pretty good. A bit too well done with a 90s sear so next will b 4h at 134° and a 1m sear.

Running a few ribeyes through the Sous Vide. Put them in frozen and will SV them for 4 hours, then sear in a pan... got a bunch of flat iron steaks and chuck steaks I bought from a local rancher that I'm gonna SV and refreeze for the road.

Question: is running a node on your own computer something that needs constant monitoring? Always listening to Podcaster talk about running nodes and there's always technical issues... crashes etc... I'd like to try running a node but I'm never home and running one in the truck doesn't seem like a good idea hardware wise...
