Sweet Potato and Lentil Curry

"Have you guys tried cooking in an instant pot/pressure cooker without using oil? I find that subbing the oil for a couple of tablespoons of water when sauteeing does the trick for me. This curry is so creamy, I think it quite resembles a dahl but with added sweetness from the sweet potato!"
Ingredients:
• 1 onion
• 1 clove garlic
• 1 tomato
• 1/2 cup lentils
• 1 sweet potato
• 2 cups water
• 1 tbsp tomato paste
• 1 tsp turmeric
• 1 tsp cumin powder
• 1 tsp chili
• Salt
• Pepper
• 1/4 cup coconut yogurt (optional)
Directions:
• Dice the tomato and onion. Finely chop the garlic, and cut the sweet potato into small chunks.
• Turn on the Saute function on the instant pot. Add 3 tablespoons of water, onion, and garlic. Saute until the onion is translucent, about 2 minutes, then add the tomatoes and saute for another 2 minutes.
• Add the sweet potato chunks, lentils, tomato paste, turmeric, cumin powder, chilli, salt, and pepper. Stir to combine. Add the water, lock the lid and turn the steam valve to sealing. Set Instant Pot on high pressure, and then set the timer to 8 minutes. Once cook time is complete, do a quick release.
• Top with avocado slices and a dollop of coconut yogurt and serve.

• 14oz silken tofu
• 1c dates
• 3/4c cocoa
• 1tsp vanilla
• 1c raw cashews

Veganized Recipe (adapted from Reddit post):
• Cut the zucchini into 1/4-1/3 inch rings
• Dip in vegan egg wash seasoned with salt, pepper, garlic powder and onion powder
• Roll them in the Italian bread crumb mixture, enhanced with grated vegan Parmesan cheese, onion and garlic powders, some Cayenne pepper for a kick, and salt and pepper. There's no need to double dip in the breading they will be crispy as is.
Then lay them in a single layer on the racks of your air fryer oven.
Cook @400 degrees for 12-15 minutes or until golden. Rotate the racks midway through.
Compliment with a vegan Ranch dressing or other vegan dip. :))

Note: The original user has deleted their account. I have posted their altercations below for long-term archival:
• 15 oz/425g canned pumpkin puree (or roasted pumpkin/other squash flesh)
• 2 tbsp ground flaxseed mixed with 6 TBSP water ~10 minutes prior to mixing (flax egg)
• 2.5 C rolled oats, blended into flour (~2 cups oat flour)
• 1/2 C to 1 C pitted dates (pumpkin is not that sweet, so I did 3/4 C)
• 1/2 C plant milk (water also works in a pinch)
• 1.5 tsp vanilla extract
• 1 tbsp pumpkin spice mix, or make your own
• 1 tsp baking powder
• 1/2 tsp baking soda (bicarbonate of soda)
• 1/2 tsp salt (optional)
• 1/4 C pumpkin seeds, plus more for topping if desired (could also use walnuts, pecans, other seeds, or a mix)
Mix the dry ingredients. Blend the dates with the plant milk and add the wet ingredients once blended. Mix wet with dry ingredients. Add to non-stick bread pan with some parchment paper and top with pumpkin seeds and bake at 350F/180C for ~45 minutes or until a knife comes out clean. Add more pumpkin for more moist bread. Enjoy!
