Island Kiss Salmon Crudo ๐Ÿ‘Œ๐Ÿป๐Ÿ’‹๐Ÿคค

I marinated the salmon in rock salt, coconut sugar, lime, and lemon juice. Thinly sliced it and served it over cream cheese, soy, cucumber, and avocado mousse. Finished with red oil, jalapeรฑo, spring onion, and cilantro to add some fire to the plate. ๐ŸŸ๐Ÿด

Currently, I work as a Sous Chef at an Italian restaurant on Prince Edward Island in Canada.
