Haven't touched a Pi in years, small form-factor used enterprise computers are light-years ahead in every way and often cheaper too these days.
Practically no one builds their own binaries or APKs either, that's not the point of FOSS.
The point is that you can at any time reproduce the resulting image or binary from the code and can choose to go the extra mile and compile it all yourself.
Using hosted images is well worth it the vast majority of the time for simplicity, but Docker also makes it trivial to compile locally as well.
Real server will definitely win, cannot hate Pi's enough for practically any Bitcoin-related purposes.
So bad.
Can't be solved, it's always possible but we can minimize the risk through audits, eyes on code, and being cautious with upgrades to that part of the protocol.

Have to remember though that as Lightning grows in usage it ultimately always relies on the base layer for security and thus inherits privacy issues from the base layer.
Need good privacy tools on both.
