Beef and Broccoli

- 1 clove of garlic, crushed

- 1 tbsp rice wine vinegar

- 1 tbsp soy sauce

- generous 1/2 cup beef stock

- 225g broccoli florets

- 2 tbsp cornstarch

- 2 tbsp avocado oil

- 1 lb rump steak, finely sliced

- 1 tsp salt

1. Put the steak in a container

2. Combine 1tbsp cornstarch w/ wine & soy sauce, stirring into the meat and marinating half an hour

3. Heat oil w/ salt & garlic and fry until garlic is slightly browned

4. Add steak & marinade, stir fry 4 minutes

5. Add the broccoli, stir fry 3 minutes

6. Add stock, bring to boil, cover and simmer approx 5 minutes until broccoli is just soft but still crisp

7. Mix the rest of the corn starch with a little water and mix into the sauce

8. Simmer, stirring until the sauce clears and becomes thick

Calves’ liver with bacon

1. Season slices of calves’ liver with salt & pepper then coat in flour, shaking them to remove any excess.

2. Fry then drain two thin slices of bacon for each slice of liver.

3. Cook the liver for approx 10 minutes in the same pan, arrange on a plate, and garnish with bacon and slices of lemon. Keep warm.

4. Make a sauce using the meat juices and an acid like lemon juice or vinegar.

5. Pour over the top and sprinkle with parsley

Bacon omelette

Cut thick slices of bacon into cubes and fry in butter.

Add to the eggs, beat together and make an omelette

In 1968, Ancel Keys & Ivan Frantz began a randomized control trial involving 9000+ people to study the effects of replacing saturated fat with vegetable oils high in linoleic acid.

The study concluded in 1973, but the complete results remained unpublished during Keys' lifetime.

In 2013, the raw data was discovered at the estate of Ivan Frantz.

Analysis of the data showed that while replacing saturated fats with vegetable oils did reduce serum cholesterol by 14% on average, it did not reduce the risk of death from coronary heart disease or other causes.

In fact, cardiovascular mortality increased when saturated fats were replaced. According to the paper, "There was a 22% higher risk of death for each 30 mg/dL (0.78 mmol/L) reduction in serum cholesterol."
