This recipe uses red curry paste to make your chicken breast go from bland to inspired.
1 chicken breast
1 cup string beans (long)
4 Kaffir lime leaves
1.5 tbsp red curry paste
1.5 tbsp palm sugar
1 tsp fish sauce
2 tbsp oil (I use Avocado oil)
Prep:
1. Cut chicken into bite-sized pieces.
2. Cut beans into 1-2 inch pieces.
3. Cut lime leaves.
Cook:
1. Heat oil in a wok or large pan on high
2. Once hot add chicken and space it out in the pan to brown
3. Add curry paste, palm sugar and leaves, stir until sugar melts.
4. Add beans lower the heat to medium and stir until cooked.
Spicy stir fried chicken guaranteed to make your lips tingle.
Serve over mashed potatoes or Jasmine rice.
