Sorry, I'm no guru. I've only worked with ground meats so far.

I do know that there is a sweet spot to find with marinating the meat so it doesn't get tough due to the salt, and there has to be a balance of acid & salt. I'd check with jerjyholic.com which has hundreds of recipes/methods for many cuts and different meats.

Ok, prepping some meat for beef jerky. My husband sliced up a roast for this batch, and we decided to tenderize it ourselves. I think this might make it easier to bite off after its been dried, and maybe absorb the flavors better too. Got a little bit of snow on the ground right now. It’ll be gone by noon though. Sheep were surprisingly friendly yesterday when I went out to feed them. Apparently they didn’t understand why I drug their buddy out Monday night. Relieved too. One of my favorite parts of the day is when I go out & feed them. Scratch under their chins.

Going to be a busy morning in the loan mine. Have an early morning meeting for our new computer system coming through & still have my training from last week.

Did the ice wine festival on Saturday with some friends last weekend. That’s always fun. Drank too much of the sweet wine though. Had to end my night with a Pinot Noir

Brrrr. 29F outside this morning. Woodstove is rolling, Honduran in my mug. Drinking it a little faster today since it cools down so fast with a chill in the camper.

Groceries, laundry and a day with my wonderful wife. She has the day off today and is choosing to spend it with me. I think she may have a crush on me.

Yesterday ended up being a slower day in the loan mine than I wanted, but am still on track to get something of a bonus this month, it’s been a few, looking forward to it.

Yep, there’s a bit of frost, but the snow appears to be gone for now. I’d bet that I get a few more white mornings, but I’d be surprised if anything sticks for more than a day from here on out.
