I prefer unsalted butter for anything pastry related. Purely for the fact that I can then control how much salt I actually add. Gives you a better base to start from. Nothing wrong with salt per se, and I’m a huge fan of sweet goods with salt to balance the sweetness. Most pastry chefs don’t use salt enough tbh.

Roasted instead of boiled a corned beef today! It was delicious. The recipe said to have 6c water in the roasting pan, but I used 6c of my homemade broth instead (made from beef and chicken bones with veggie scraps simmered over days). After seeing how much broth was left (much more than remains in the picture, it barely went down at all), I don’t think I needed to use so much… good thing nostr:npub1jrx2fk666k5nt8vgak9xwyxlgcwh8fl9rvpwvvcpdthuqkcnptrqdfhtaq loved the taste even more than the normal broth and wants to drink it 😁
I roasted some cabbage wedges slathered in bacon fat until they got crispy and served them with a dressing I threw together, vaguely emulating a Russian dressing recipe my friend made with her roasted cabbages, but using ingredients I actually had on hand, so almost nothing like Russian dressing at all 😂 it was pretty good: mayo, harissa, lemon juice, minced red onion, live cultures juice from pineapple curtido, hot garlic grainy mustard, and spices (smoked paprika, garlic, onion, salt)
A hot mug of strong black tea and some homemade sourdough with pasture butter to go with… this was quite an excellent meal 😊

Depends on what part you’re going to as well, Sydney does amazing Lebanese food, Fremantle in Perth has lots of seafood and Italian restaurants, and Melbourne is the food capital - you’ll be spoiled for choice no matter where you go
Anything up north in Broome or Darwin will have lots of Aboriginal and Asian influences
So much to choose from!
